Lower Fat Oatmeal Molasses Cookies |

These are really good low-fat cookies. They have a good consistency and flavor. I have made them so many times and my family loves them. Ingredients:
1/4 cup margarine, softened |
3/4 cup sugar |
1/4 cup molasses |
1 egg |
1 teaspoon vanilla extract |
1 3/4 cups flour |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1 cup oats, uncooked |
1 teaspoon cinnamon |
1/2 teaspoon ground ginger (optional) |

sugar, to roll cookies in |
Directions:
1. Cream margarine; gradually add sugar, beating at medium speed of an electric mixer until well blended. 2. Add molasses, egg and vanilla; beat well. 3. Combine flour and next 5 ingredients in a medium bowl, stirring mixture well. 4. Gradually add flour mixture to creamed mixture, mixing well to combine. 5. Drop dough by level tablespoonfuls, 2 inches apart, onto cookie sheets coated with cooking spray. 6. Bake at 350 for 12-13 minutes or until very lightly browned. 7. Cool slightly on cookie sheets. 8. Remove from cookie sheets and cool completely on wire racks. |
