Lower Fat version of Chef Connie K.'s veggie meatloaf. Ingredients:
1 (16 ounce) carton 2% fat cottage cheese |
4 egg whites, beaten |
1/4 cup ketchup |
1 (1 ounce) envelope dry onion soup mix |
1 cup walnuts, finely chopped |
3 cups corn flakes |
1/4 cup onion, finely chopped |
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). 2. Drain the cottage cheese in a cloth or coffee filter lined strainer. 3. Grease a loaf pan. 4. In a large bowl, combine cottage cheese, eggs, ketchup, soup mix, walnuts, cereal and onion. 5. Spoon into prepared pan. 6. Bake for 60 to 70 minutes. 7. Let the 'roast' rest for 5 to 10 minutes; turn out onto serving platter. |
