I have tried several different Caesar dressing recipes and yet I keep coming back to this one. This recipe will be slightly tangier than a regular Caesar dressing since it uses non-fat plain yogurt. If you don't have plain yogurt on hand, you can simply substitute it with another cup of extra-virgin olive oil. Splurge and get the first cold-pressed extra-virgin olive oil for this recipe. And, if possible, spring for the organic non-fat plain yogurt. It's healthier and full of live active cultures which is important since 80% of your immune system is located in your digestive system. Ingredients:
1 cup extra virgin olive oil |
1 cup nonfat plain yogurt |
1/3 cup apple cider vinegar |
3 (2 ounce) cans anchovies or 4 tablespoons anchovy paste |
3 eggs |
2 tablespoons worcestershire sauce |
1 tablespoon dijon mustard |
1 tablespoon garlic powder |
1 1/2 teaspoons salt |
1 teaspoon pepper |
Directions:
1. Combine vinegar, eggs, Worcestershire sauce, mustard, garlic powder, salt, and pepper in a blender and mix. Add yogurt and either anchovies or anchovy paste and blend together thoroughly. In a slow stream add olive oil through the hole in the lid. Refrigerate dressing until ready to use. |
