Low Sugar Sweet Potato Pie |

I make this for my hubby as he's diabetic. We couldn't find ANY sugar free sweet potato pie, so I made this one up. Ingredients:
3 t. margarine, softened |
1/4 c. splenda brown sugar |
5 pkt. splenda |
1/2 tsp. ground cinnamon |
1/4 tsp. ground ginger |
1/4 tsp. salt |
1/8 tsp. ground allspice |
2 egg yolks |
2 c. mashed cooked sweet potato (or 1 large sweet potato) |
1 c. skim fat free milk |
3 large egg whites |
1 9-inch unbaked pie shell |
Directions:
1. Preheat oven to 350°. 2. In a large bowl, beat together margarine, sugar, brown sugar, cinnamon, ginger, salt, allspice, & egg yolk. 3. Whisk in sweet potatoes & milk. In medium bowl, beat egg whites until stiff. 4. Fold into sweet potato mixture, not stir. 5. Pour into unbaked pie shell. 6. Bake 40-45 minutes, until a tester inserted in center comes out clean. 7. Cool on rack until ready to cut into wedges to serve. |
