My hubby's diabetic and loves banana bread as I do too. Can also use honey instead of Splenda as Honey is natural sugar as I use raw honey. Ingredients:
1 cup splenda (or you can substitute 1/2 c of honey and decrease milk to 2 tbsp) |
1 cup mashed banana (approx 2 or 3 bananas) |
1/2 cup smart margarine |
1/4 cup milk |
1 tsp vanilla extract |
2 eggs |
1 c unbleached white flour |
1 c whole wheat flour |
1 tsp baking soda |
1 tsp sea salt |
Directions:
1. Heat oven to 350. 2. Grease (not oil) bottom only of 9x5 loaf pan or dish. 3. In large bowl, blend first 6 ingredients, beat for 1 minute at med speed. 4. Stir in remaining ingredients just until dry ingredients are moistened. 5. Pour batter into prepared pan/dish. 6. Bake at 350 for 55-60 mins (may have to cook longer depends on your oven) or until toothpick inserted in center comes out clean. 7. Cool 5 minutes, remove from pan and cool completely before slicing. |
