Much lower sodium than most black bean soup serve with grated mozzarella Ingredients:
2 tsp olive oil |
1 large onion, chopped |
2 tsp ground coriander |
1 tsp ground cumin |
1/4 tsp ground pepper |
1/2 tsp cilantro |
12 oz sweet potato, (1 lg) peeled and diced |
6 cups water (flavored with no sodium bullion) |
30 oz black beans , cooked with no salt |
15 oz kidney beans , cooked with no salt |
3/4 tsp salt |
Directions:
1. Put all ingredients in a large pot and cook for 2. 25 minutes 3. Blend until smooth with immersion blender or in a regular blender |
