Low Sodium Beef Lentil Soup |

Being sodium sensitive, I find this is a nice alternative to the typical beef lentil soup. Ingredients:
1 quart water |
1 lb 96% lean ground beef |
46 ounces low-sodium tomato juice |
1 cup dry lentils |
2 cups green cabbage |
1 cup carrot |
1 cup celery rib |
1 cup yellow onion |
1/2 cup green pepper slices |
1/2 teaspoon black pepper |
1/2 teaspoon ground thyme |
1 bay leaf |
Directions:
1. Brown beef. 2. Shred cabbage, slice carrots, celery ribs, and chop yellow onions. 3. Add all ingredients into a large stock pot. 4. Bring to boil. 5. Reduce heat and simmer uncovered for 1 hr or until lentils and vegetables are tender. 6. Remove bay leaf before serving. |
