A hearty meal to celebrate your Irish heritage (or anyone's Irish heritage) without all the sodium found in corned beef. If you're allowed to have salt, then use to taste. If you like salt, but can't have it, ask your doctor about potassium salt. Ingredients:
2 lb beef stew meat |
1 ea garlic |
1/4 t black pepper,fresh ground |
1 onion,halved and sliced |
12 oz dark beer |
2 c low sodium beef broth |
3 t no salt added tomato paste |
2 c carrot,sliced |
4 potatoes,cut into quarters |
2 turnips,cut into quarters |
1 t rosemary |
2 bay leaves |
1/4 c cornstarch |
1/2 c water |
Directions:
1. Combine all ingredients except the cornstarch and water in a slow cooker and cook on low for 8 hours. 2. Combine the cornstarch and water in a bowl and stir into the stew. 3. Turn to high, cover the slow cooker and allow the stew to cook an additional 30 minutes, until thickened slightly. |
