1.5 cups sugar |
1.5 cups all purpose flour |
1.5 cups whole wheat flour |
1 tsp baking soda |
0.25 tsp baking powder |
0.25 tsp salt |
1 tbsp cinnamon |
1 tbsp vanilla |
0.25 tsp nutmeg |
0.25 c chopped walnuts |
3 eggs |
3 cups zucchini, grated or finely diced |
0.25 c canola oil |
0.5 c pureed apple |
0.25 c pureed banana |
Directions:
1. Preheat oven to 350 F 2. Mix all the dry ingredients together in a large bowl 3. Mix all the wet ingredients in a seperate bowl 4. Add the wet ingredients to the dry ingredients and stir, but we careful not to over mix. 5. Pour into mini loaf pans (around 5 mini loaves) 6. Bake for 40-45 minutes. 7. Insert a bamboo skewer to test if they are done. 8. The skewer should be 95% dry, but will not be completely clean. That is okay, you want the bread slightly moist! 9. Slice the loaves into 6 slices each (more or less, up to you) |
