You can barely taste the hidden zucchini in this recipe, which makes it a perfect way to get kids to eat their vegetables. It is moist, sweet, and flavorful- not to mention easy to make! Use it for breakfast, dessert, accessory to a meal, or a snack. Ingredients:
2 1/2 cups sugar |
3 eggs |
3 cups flour |
2 -3 cups zucchini, grated or finely diced |
1/4 cup oil |
3/4 cup applesauce |
1 teaspoon baking soda |
1/4 teaspoon salt |
1/4 teaspoon baking powder |
1 tablespoon cinnamon |
3 tablespoons vanilla |
Directions:
1. Mix together all ingredients. 2. Pour into 3 loaf pans (or 2 if you want larger loaves). 3. Bake at 350 for about 60 minutes. |
