This bread is a great snack or even a dessert. Serve with a 1/2 cup of frozen fat free yogurt for a wonderful dessert. Ingredients:
2 cups shredded zucchini |
3 eggs |
1 cup splenda |
1 banana |
1 cup applesauce |
2 cups whole wheat flour |
1/4 tsp baking powder |
2 tsp baking soda |
2 1/2 tsp cinnamon |
1 tsp salt |
2 tsp vanilla |
1 cup walnuts |
Directions:
1. Shred a medium zucchini. Squeeze in hands to remove excess liquid. 2. In a large bowl mix the zucchini, eggs, splenda, mashed banana, vanilla, and applesauce. ( Stir by hand ) 3. In a second bowl stir the whole wheat flour, baking powder, baking soda, cinnamon, salt and chopped walnuts. 4. Stir the dry ingredients into the zucchini mixture. Stir by hand. 5. Spray 2 loaf pans. Pour 1/2 the batter into each pan. 6. Bake at 350 for 55 to 65 mins. |
