Low Fat Vegetable Spaghetti Sauce |

I love this 'easy to make' homemade sauce. It's bursting with all of the veggies that I love. Ingredients:
3 cups button mushrooms, fresh and sliced |
1 small onion, chopped |
1 garlic clove, minced |
2 tablespoons olive oil |
8 ounces tomato sauce |
8 ounces stewed tomatoes |
1/2 cup dry red wine |
1/4 cup parsley |
1 teaspoon sugar |
3/4 teaspoon dried basil |
2 cups zucchini, diced |
Directions:
1. Cook mushrooms,garlic and onion in hot olive oil over medium heat for 5 minutes or until onions are tender. 2. Stir in the tomato sauce,tomatoes,wine,parsley,sugar and herbs. 3. Bring to a boil,then reduce heat and simmer,uncovered for 20-25 minutes or until sauce is slightly thickened. 4. Stir in zucchini and continue to simmer for 5-10 minutes or until zucchini is tender. 5. Serve over spaghetti. |
