A great use for left-over Turkey. Ingredients:
1 cup chopped onion |
1/2 cup chopped celery |
1/2 cup chopped carrot |
3 tablespoons extra virgin olive oil |
1 cup sliced white mushrooms |
1 cup chopped turkey |
2 tablespoons flour |
15 oz. chicken broth |
Directions:
1. Saute onions, celery and carrots in the olive oil using a skillet. Once tender/crisp add mushrooms saute for about 10 more minutes, add flour and cook for 2 minutes before adding chicken broth. 2. Once mixture comes to a boil after adding chicken broth, and starts to thicken add Turkey and cook for about 5 minutes on stove top. 3. Spray casserole dish with non-stick spray. Pour the Turkey/veggie mixture into the casserole dish. Top with lowfat bisquik biscuits. 4. bake at 350 for 15-20 minutes until filling is bubbling and the biscuit is cooked through. |
