This is a unique and simple pasta dish to throw together for lunch or dinner. Great for a side dish too or brunch item. Only 150 calories per serving. Keep it simple, keep it light and add some spice! (Was that Sandra Lee? Read more ??) Ingredients:
1 box whole wheat grain fettuccine, cooked. (or the regular!) |
6 slices turkey bacon, cooked (or regular of course!) |
1 large onion, chopped. |
4-5 large tomatoes, peeled and seeded. (or save time with large 2 cans of low sodium, prepared tomatoes. |
2 tbs fresh parsley |
2 tsp olive oil |
2 garlic cloves , minced. |
1 tsp basil |
1/2 tsp kosher salt and ground black pepper |
1/2 tsp cayenne pepper |
fresh greated parmesean |
Directions:
1. Cook pasta according to package directions. Keep warm. Set aside. 2. Fry bacon until crisp, drain. 3. Chop onions and tomatoes. 4. Snip parsley. 5. Heat olive oil in large pan...(or stir fry pan) 6. When oil is hot, add garlic. and cook 30 seconds. 7. Add onion cook for 3 minutes. 8. Add rest of ingredients and seasonings and cook for 3 or 4 minutes, stir until heated. 9. Remove from heat and serve over pasta. 10. Grate fresh parmesean over all and be generous!! 11. Enjoy. |
