Serve this dressing with salad, sliced tomatoes, or a seafood salad. Each tablespoon has about 12 calories Ingredients:
1/3 cup low-fat mayonnaise |
2 tbsp. ketchup |
2 tbsp. fresh lemon juice |
2 tbsp. minced red bell pepper |
1 tbsp. minced onion |
1 tbsp. minced flat leaf parsley |
1 tbsp. sweet pickle relish |
pinch of cayenne |
1/4 cup water |
Directions:
1. In a blender or food processor blend all ingredients and salt to taste until smooth, slowly adding up to 2 tbsp. of additional water if necessary to thin to desired consistency. 2. Dressing keeps covered and chilled for 1 week. Makes about 1 cup. |
