I altered this recipe from one I had at home by using soy flour and splenda. Soy flour is high in protein & lower in carbs. Depending on the kind you use, it can be higher in fat. You may need to add a bit more applesauce if you use the low fat soy flour as it is chalkier & will absorb alot of your moisture. Ingredients:
1 cup soy flour |
1/2 cup whole wheat flour |
1 teaspoon baking powder |
1 teaspoon baking soda |
1/3 cup splenda granular |
2 tablespoons applesauce |
1 large egg |
4 medium ripe bananas (mashed) |
Directions:
1. Blend splenda & apple sauce. Combine with mashed bananas & dry ingredients only until moistened. Scoop mixture into a greased loaf pan & bake 35 - 45 minutes at 350F until toothpick inserted comes out clean. 2. ***This is really good served with natural peanut butter on a slice.***. |
