Low Fat Southwestern Chicken Salad |

Goes well with reduced fat wheat thins or just saltines. It's easy to fix, something quick for lunch and low cal. Ingredients:
1/3 cup of low fat ranch dressing (bottle kind) |
1/3 cup of low fat sour cream |
2 tsp of chopped onion |
2 tsp of parsley |
1 tsp of lime or lemon juice |
1/2 tsp of tabasco sauce if you want an extra kick to it |
2 tsp of taco seasoning mix |
1 tsp of ranch dressing mix (in the package) |
2 skinless chicken breasts boiled and shredded |
Directions:
1. In a blender put in the ranch dressing, sour cream, onion, parsley, lime or lemon juice, ranch season mix, and taco seasoning. Puree/Blend the ingredients. Once it's really smooth then mix it with the shredded chicken, cover and chill for 4 hours. |
