Easy to prepare and with less oil than a lot of potatoes. Ingredients:
3 medium red potatoes, diced |
2 teaspoons extra virgin olive oil |
1 pinch salt |
1 pinch pepper |
parsley, basil, paprika to taste |
Directions:
1. Preheat oven to 325 degrees F. Spray lined baking sheet with cooking spray. 2. Remove eyes and scrape away bruises and dice potatoes. Add olive oil, salt, pepper and any other seasonings you like and toss to coat. 3. Bake for 15-20 minutes, turn and bake for another 15-20 minutes. |
