Here's a great low-fat cake recipe created by Chef Chris Larson. Moist and choclately with a mocha background Ingredients:
1 1/2 cup cake flour |
1 tsp. baking soda |
1/8 tsp. salt |
2 tbsp. flour for pan coating |
3/4 cup unsweetened applesauce |
1 cup turbinado natural sugar |
2/3 cup unsweetened chocolate morsels , melted |
2 eggs unbeaten |
1 tsp. vanilla extract |
3/4 cup strong coffee |
vegetable oil spray |
Directions:
1. Preheat oven to 350 degrees. 2. Spray a 13x9x2-inch pan with vegetable oil spray; then dust with flour. 3. In a large mixing bowl, sift together flour, salt and baking soda. 4. Whisk in applesauce, sugar, eggs, vanilla, coffee and 1/2 of the melted chocolate; beat for 1 minute by hand. 5. Add remaining chocolate and beat for 2 more minutes until chocolate is fully incorporated. 6. Pour into pan and immediately place on middle rack of preheated oven. 7. Bake 35 to 40 minutes, or until a toothpick inserted into the center, comes out clean. 8. Let cool in the pan for 10 –15 minutes, then run a knife around the outside of the pan until the cake easily slides out. 9. Allow the cake to fully cool on a rack before cutting or frosting. 10. Sprinkle top with powdered sugar or spread with instant low-fat chocolate pudding. |
