Low Fat Pimento Cheese Spread |

Being from So California originally I had never heard of pimento cheese. Once I tasted it I was hooked. But....way too many calories for me to have it as anything more than occasional treat. So, I went to work trying to make it as low fat as I could and still have that great flavor. I just made this and it's resting comfortably in the fridge. Might have to tweak it a bit, but here goes! Cooking time is chilling time. Ingredients:
1/2 cup fat-free cottage cheese |
1/2 cup fat free cream cheese |
4 ounces diced pimentos, with liquid |
3 tablespoons stuffed green olives, diced |
1/4 cup greek yogurt |
2 cups fat-free cheddar cheese, shredded and divided |
Directions:
1. In a food processor blend the first 5 ingredients until smooth. Add 1 c cheese, blend just until mixed. 2. Stir in remaining cheese and chill for at least 2 hours. |
