This recipe came out of the The New Cookie Book . These are great and perfect. They are so delicious that it is difficult to believe that they are healthy too. They are packed with flavour and wonderfully crunchy.
Ingredients:
3/4 cup clear honey
1/2 cup orange juice
1 cup rolled oats, lightly toasted
1 cup all-purpose flour
1/2 cup superfine sugar
1 orange rind, finely grated
1 teaspoon baking soda
Directions:
1. Preheat oven to 350 degrees.
2. Line two baking sheets with parchment paper.
3. Put the honey and orange juice in a small pan and simmer over a low heat for 8 - 10 minutes, stirring occasionally, until the mixture is thick and syrupy.
4. Put the oats, flour, sugar and orange rind into a bowl. Mix the baking soda with 1 tbsp boiling water and add to the flour mixture, together with the honey and orange syrup. Mix well with a wooden spoon.
5. Place spoonfuls of the mixture on to the prepared baking sheets, spaced slightly apart and bake for 10 - 12 minutes or until golden brown. Leave to cool on the sheets for 5 minutes before transferring to a wire rack to cool completely.
