Low Fat Mini Apple Crumble Muffins |

Couldn't help but share these, they are just so nice! My 2.5year old daughter helped me make these and they are dedicated to her :) she loved them. They are quite low in fat and in calories as I am on one of those diets. Ingredients:
1 cup wholemeal self-rising flour |
2 tablespoons sugar substitute |
1/2 teaspoon cinnamon |
2 tablespoons oil |
1/2 cup skim milk |
1 apple, peeled and chopped into small pieces |
2 tablespoons oats |
Directions:
1. Heat oven at 200 degrees celcius, and spray mini muffin tins. 2. Mix in a large bowl, flour, sugar substitute, cinnamon. 3. Stir in oil, milk and apples, mix gentle to make sure all flour has been incorporated. Do not overstir. 4. Place 1/2 tablespoons into mini muffin tin to just come up 3/4 of the tins. 5. Sprinkle a few oats on top and place in oven. 6. Bake for 10-15 minutes until brown and springs back when touched. 7. Enjoy when fresh out of oven! |
