Low-Fat Low Sugar Bran Pineapple Muffins |

Deliciously healthy small batch of muffins. Ingredients:
1 cup all-bran cereal (i use allbran) |
1/2 cup whole wheat flour |
2 teaspoons baking powder |
2 egg whites |
1/2 cup nonfat milk |
1/4 cup sugar substitute |
1/4 cup pineapple chunk |
Directions:
1. Combine milk and bran cereal and set aside for 5 minutes. 2. Combine flour, baking powder, and salt. Add to bran, then add egg white. Mix in pineapple chunks. 3. Divide into 6 sprayed muffin cups. Bake at 400°F for 18 minutes or to test. |
