Low-Fat Ham and Sour Cream Pasta |

Recipe taken from a Pillsbury cookbook, with a few adaptations. Ingredients:
7 1/2 ounces dried bow tie pasta |
2 (8 ounce) containers light sour cream |
1 (12 ounce) container fat-free cottage cheese |
1 tablespoon flour |
3/4 cup 2% low-fat milk |
2 eggs or 1/2 cup egg substitute |
2 cups cubed lean ham |
1/2 cup red bell pepper, chopped |
1/2 cup finely chopped celery |
1 tablespoon minced onion |
Directions:
1. Cook pasta in boiling water as directed on package. Drain. Meanwhile, heat oven to 325 degrees. Spray a 13x9 casserole dish with nonstick cooking spray. 2. In blender container, combine sour cream, cottage cheese, flour, milk, and eggs; blend well. In a large bowl, mix ham, bell pepper, celery and onion. Add the sour cream mixture and pasta to bowl and mix well. Pour into sprayed casserole. Spray a sheet of foil with cooking spray and cover baking dish. 3. Bake 50-60 minutes or until thoroughly heated. Stir before serving. |
