Low Fat Garlic Mashed Potatoes with olive oil and chicken broth Ingredients:
1 3/4 lbs. yukon gold potatoes, skin on |
4 cloves garlic, peeled and quartered |
2/3 c. chicken broth |
1 1/2 tbsp. olive oil |
1/2 tsp. salt |
1/4 tsp. pepper |
Directions:
1. Place potatoes and garlic in steamer basket fitted over a large pot of boiling water. Cover and steam until knife tender, 12 to 15 minutes. Warm the chicken brothin small pot. 2. Mash all ingredients until smooth. |
