Low Fat Fruity Balsamic Vinaigrette |

I make currant jelly every year but it turns out to be syrup. This is a great recipe to use that jam or jelly that doesn't set up. Ingredients:
1/2 cup balsamic vinegar |
1/4 cup currant jelly (or raspberry, cranberry, blueberry, cherry preserves) |
2 tablespoons olive oil |
2 tablespoons water |
2 teaspoons dijon mustard |
1 garlic clove, minced |
1/8 teaspoon salt |
pepper, to taste |
Directions:
1. Whisk all ingredients together in a small bowl except for salt and pepper. Season to taste. Serve over your favorite salad greens. |
