Low-Fat English Rice Pudding |

This was handed down from my step-dads VERY ENGLISH family. I have adapted it for my diabetic mother and it is just as good. Ingredients:
1 cup white rice |
1 cup water |
5 cups skim milk |
10 teaspoons sugar substitute |
1 teaspoon cinnamon |
1 teaspoon vanilla extract |
1 teaspoon lemon juice |
1/2 cup raisins |
Directions:
1. In Dutch oven combine 1 cup water and 1 cup rice. 2. Bring to a boil. 3. Add 5 cups milk and raisins. 4. Cover and lower heat to simmering. 5. Simmer for about 1 1/2 hours until all liquid has been absorbed. 6. Remove from heat. 7. Add all other ingredients. 8. Best eaten chilled. |
