Low Fat Dark Chocolate Pudding

Ingredients:
2 c milk, 1
2 t unsweetened cocoa
3 t sugar
3 t cornstarch
1 t vanilla extract
1 pinch kosher salt
Directions:
1. Mix dry ingredients well, breaking up any lumps with a whisk or fork.
2. Add small amount of milk (1/4 Cup) to the dry ingredients, mixing into a paste, then add the rest of the milk, mixing well.
3. In a 2 quart microwave safe bowl, microwave for 6-8 minutes, stirring every two minutes. Remove from microwave when the mixture has reached a full boil. Watch it carefully to make sure it doesn't overcook/overflow! Stir in the vanilla extract, then put into 4 serving dishes.
4. Put plastic wrap over the top to prevent a skin if you like.
5. This is great with fresh fruit. Prepare with Skim or 2% milk if you like, but watch the changes in nutrient values.
