These are my favorite cookies. I love to eat some with a nice cup of tea at the afternoon. They are crispy and very tasty. Ingredients:
3 tablespoons butter, softened |
1 1/2 cups white sugar or 1 1/2 cups sugar substitute, such as splenda |
2 egg whites |
1 teaspoon lemon juice |
2 1/3 cups flour |
2 1/2 teaspoons baking powder |
2 teaspoons cinnamon |
1/4 teaspoon salt |
1/4 teaspoon ground nutmeg |
1/2 cup chopped walnuts |
1 tablespoon skim milk |
Directions:
1. Preheat oven to 375°F 2. In a small bowl combine milk and 1 tsp cinnamon, set aside. 3. Cream butter with the sugar, the egg whites and the lemon juice until fluffy. 4. Combine flour, powder, 1 tsp cinnamon, salt and nutmeg. 5. Add the flour mixture in the creamed mixture, stir in walnuts. 6. Roll dough onto a floured surface. 7. Cut with cookie cutter. It's optional. If I'm in a hurry, I just shape a little balls, then I place them onto baking sheets and then flat them with a fork. 8. Brush with the milk and cinnamon. 9. Bake about 10 minutes. |
