LOW FAT CREAMY ARTICHOKE AND SPINACH DIP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Butler Estate in Irving, Texas in 1988. Ingredients:
9 ounces frozen artichoke hearts |
5 ounces frozen chopped spinach |
1/2 cup chopped white onion |
1/2 cup defatted chicken broth |
1 tablespoon minced garlic |
1/2 cup low fat mayonnaise |
1 tablespoon lemon juice |
1 tablespoon grated parmesan cheese |
1/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
Directions:
1. In heavy skillet bring artichoke hearts, spinach, onion, broth and garlic to boil over high heat. 2. Reduce heat then cover and simmer 12 minutes stirring several times until artichokes are tender. 3. Drain in a strainer then process in a food processor or blender until almost smooth. 4. Scrape into a small bowl then partially cover and refrigerate at least 1 hour or until cold. 5. Stir in remaining ingredients and mix until well blended. 6. Chill and keep refrigerated until ready to use. |
