A very tasty alternative to beef meatloaf. My family loves this recipe. They don't even realize that it is good for them, low fat and sneaks in a serving of vegetables. Ingredients:
1 lb lean ground turkey |
1/2 cup carrot |
1/2 cup onion |
1/2 cup mushroom |
1/4 cup sweet red pepper |
1/2 cup canned tomato sauce |
2 tablespoons soy sauce |
1/2 cup dried breadcrumbs |
1/4 cup egg substitute |
1/4 teaspoon garlic powder |
1/4 teaspoon table salt |
1/4 teaspoon black pepper |
Directions:
1. Preheat oven to 350°F Grease a shallow baking pan; set aside. 2. Dice the carrots, onions, mushrooms and red peppers. 3. In a large bowl, combine turkey, carrot, onion, mushroom, bell pepper, tomato sauce, soy sauce, bread crumbs, egg substitute, garlic powder, salt and pepper; mix well. 4. Shape turkey mixture into a loaf in prepared pan. Bake, uncovered, for 1 to 1 1/2 hours or until cooked through and starting to brown. Let stand several minutes before slicing. |
