These are really yummy and a perfect guilt-free accompaniment to chili or stews.
Ingredients:
1 cup yellow cornmeal
1/2 cup whole wheat flour
1 tablespoon baking powder
1/2 teaspoon salt
1/3 cup unsweetened applesauce
3/4 cup skim milk
1/4 cup egg white
1 (19 ounce) can cream-style corn
Directions:
1. Pre heat oven to 375.
2. Spray muffin tins with PAM.
3. Mix all ingreadients together.
4. Fill 12 muffin tins (they will be quite full).
5. Bake for 25 minutes.
