I modified a corn muffin recipe and it turned out well. Sometimes I make some of the flour natural protein powder too for more protein. Ingredients:
1 cup whole wheat flour |
1 cup cornmeal |
1/4 cup splenda |
4 tsp baking powder |
3/4 tsp salt |
1 cup skim milk |
4 egg whites |
1/4 cup applesauce |
Directions:
1. Mix together dry in one bowl. Mix together wet in another. Put wet in dry and mix just enough to blend together. Bake at 425F for 20 minutes. It might take less because of the substitutions so keep an eye on them! |
