Low Fat Cool Cauliflower Salad
Ingredients:
1 large head cauliflower, trimmed and chopped
1 red onion, chopped
1 green bell pepper, seeded and chopped
4 scallions, minced
3 tablespoons fresh chives, chopped
2 cups basmati rice, cooked
1/2 cup bottled vinaigrette dressing
Directions:
1. Place cauliflower in a steamer basket over boiling water.
2. Cover pan and steam about 3 minutes, until almost tender.
3. Chill .
4. Combine onion, bell pepper, scallions, chives, and cooked basmati rice in a bowl.
5. Add chilled cauliflower.
6. Drizzle with dressing and serve chilled.
