This is a WONDERFUL and LOWFAT recipe adapted from a Southern Living cookbook. It is so quick and simple!! The chimichangas are CRISPY and delicious!!!! Ingredients:
1 (16 ounce) can fat-free refried beans |
1 cup low fat shredded cheddar cheese |
1 tablespoon taco seasoning (old el paso is best) |
tortilla |
pam cooking spray |
garnishes of choice lettuce, salsa, fat free sour cream |
Directions:
1. Preheat oven to 425 degrees. 2. Mix beans, cheese, and taco seasoning thoroughly. 3. Microwave the tortillas for a short period to soften. 4. Place a large spoonful of mixture in center of tortilla. 5. Fold top down and bottom up, then fold sides over, into the shape of a chimichanga. 6. Place toothpicks into chimichangas to keep tortillas closed. 7. Spray both sides of chimichangas with Pam cooking spray (generic cooking spray works, but does not produce as crisp a result). 8. Place chimichangas on a nonstick cookie sheet or a sheet lined with foil. 9. Place chimichangas in the oven for 8 minutes. 10. Remove toothpicks and turn chimichangas to other side; bake for another 5 minutes. 11. Adjust cooking time as needed to obtain a crispy outside. 12. Garnish as desired. |
