This dieting chili rice that fills you up and makes dieting less of a trauma. Serve with either salad or crusty bread. Ingredients:
2 onions, chopped |
2 garlic cloves, minced |
3 1/2 ounces mushrooms, sliced |
1/2 red pepper, diced |
1/2 green pepper, diced |
low-calorie cooking spray |
7 ounces quick-cooking rice |
1 -2 tablespoon tomato sauce |
1/2 teaspoon chili powder |
1 teaspoon paprika |
1/2 teaspoon turmeric |
1 teaspoon dried sage |
1 teaspoon dried thyme |
5 scallions, chopped finely |
salt & freshly ground black pepper |
fresh herb, to serve |
Directions:
1. Fry the onions, garlic, mushrooms and peppers in a few sprays of oil for 5 minutes. 2. Add the rice and stir for 1 minute. 3. Pour in 2 pints cold water, stir through, then add the tomato sauce, spices and dried herbs. 4. Cook on a medium heat until the water is absorbed (about 15 minutes) then add the scallions. 5. Cook for a further 2 minutes then serve, dressed with some fresh herbs. |
