Low in fat and loaded full of protein and a heaping serving of vegetables, this healthy version of a cool weather favorite is great with your favorite hot sauce. Thanks to my wife for the basics for this awesome recipe. Ingredients:
1 lb ground sirloin |
2 (26 ounce) jars low-sugar spaghetti sauce |
2 (15 1/4 ounce) cans black beans |
1 (14 1/2 ounce) can light red kidney beans |
1 (14 1/2 ounce) can chili ready diced tomatoes |
1 small onion, diced |
2 garlic cloves, crushed |
2 tablespoons olive oil |
2 tablespoons cumin |
2 tablespoons chili powder |
Directions:
1. Drain and rinse all the beans. 2. In a medium soup pot, brown the beef, drain, and set aside. 3. Add olive oil to pan; sweat garlic and onion. Return beef to pot. 4. Add remaining ingredients and stir well. 5. Bring to a simmer over medium heat. 6. Reduce heat to low and simmer covered for 20-30 minutes. |
