I changed the original recipe ingredients to try to make these a better treat on the Weight Watcher's plan. The only sugar substitute I use is Splenda, I do not know how much to use of other substitutes. Ingredients:
4 eggs |
1 cup sugar |
1 cup sugar substitute |
1 3/4 cups applesauce |
1/2 cup water |
1/2 teaspoon salt |
2 teaspoons baking soda |
2 teaspoons cinnamon |
1 cup white flour |
1 cup wheat flour |
3 cups grated carrots |
2 tablespoons butter |
3 ounces low-fat cream cheese, softened |
1 teaspoon vanilla |
1 3/4 cups powdered sugar |
Directions:
1. Beat the eggs, add the sugar, applesauce, and water. Mix well. Add the salt, cinnamon, and flours. Mix well, add the carrots and mix well. Pour into a greased 10 x 15 pan. Bake at 350 degrees for 20-30 minutes, until a toothpick inserted in the middle comes out clean. Cool completely. 2. Beat butter and cream cheese until smooth. Add remaining ingredients and mix well. Spread over the bars. |
