This is a wonderful, light, low fat version of Caesar Salad dressing! Always a hit! Ingredients:
2 tbs light mayo |
1 tbs lemon juice |
1 tsp anchovy paste |
1/4 tsp worcestershire sauce |
1/4 tsp dijon mustard |
3 tbs evoo |
1/2 cup grated parmesan cheese |
2 cloves garlic, minced |
kosher salt and fresh cracked pepper to taste |
Directions:
1. Combine all ingredients in blender or food processor. Serve over romaine lettuce with whole wheat croutons. 2. *This quantity will serve 4, small, side salads, or two dinner-sized salads. Add grilled or rotisserie chicken for a more hearty meal. 3. ** you can increase the recipe and store in an air-tight jar for a week. |
