Low Fat Buttermilk Peppercorn Dressing |

I adapted a recipe from 'Canadian Living' . Fresh made dressing is always better than the commercial ones you buy in the grocery stores, wouldn't you agree? One ingredient may surprise you...well, maybe not if you make your own dressings. Note: Salt is optional. If you don't have fresh dill, use 1/2 tsp. dried dillweed. Depending on your taste, you will decide whether you will use a small, medium, or large garlic clove. You will have more than a cup of dressing to enjoy! Ingredients:
1/2 cup buttermilk, low-fat |
1/3 cup mayonnaise, light |
1/4 cup cucumber, grated and peeled |
1 tablespoon green onion, minced |
1 tablespoon dill, fresh and minced |
1 tablespoon dijon mustard |
2 teaspoons wine vinegar |
1 teaspoon peppercorn, freshly cracked |
1 garlic clove, minced |
Directions:
1. Place ALL ingredients in a blender, cover and process until smooth. 2. Pour in a container, cover and refrigerate at least 1 hour before serving. 3. Enjoy! |
