Enjoy Creamy Broccoli and Cheese Soup with out all the fat! Ingredients:
4 cups broccoli cut into small pieces |
4 cups water |
3 low-sodium chicken bouillon cube |
1 1/4 cups skim milk |
2 tablespoons cornstarch |
1/4 cup cold water |
10 ounces fat free cheddar cheese, shredded |
1 carrot, shredded |
1/3 cup nonfat dry milk powder |
2 tablespoons cornstarch |
2 teaspoons low-sodium instant chicken bouillon granules |
1 teaspoons dried onion flakes or 1/4 teaspoon onion powder |
1/4 teaspoon dried basil |
1/4 teaspoon dried parsley |
1/8 teaspoon pepper |
1 1/3 cup water |
Directions:
1. Combine in a medium size bowl Nonfat dry milk powder, cornstarch, chicken bouillon granules, onion flakes or powder, dried basil, dried parsley and pepper. Stir with whisk until smooth. Add 1 1/3 cup water. Stir. 2. Then add four cups of water and bouillon cubes into a medium size pot and set on medium heat. Stir and add broccoli. Cook until tender. 3. Then set on low heat. Add shredded carrots. 4. Add skim milk, cornstarch, water. 5. Next, add both mixtures together and allow to simmer until thickened. 6. Add cheese and simmer just until melted. |
