Low-fat, no sugar version of bread pudding. If you want to reduce the total calories even more, use low-calorie bread cubes and low-fat margarine. I don't use sugar in this recipe. Instead I top with 1/4 cup sugar-free vanilla pudding. It's yummy. The pudding calories are not included in this recipe. If you use a low-cal bread in your recipe, subtract 36 calories from each serving.
Ingredients:
2 eggs (beaten slightly)
2 cups 2% milk
1 tbls margarine, melted
1 tsp vanilla
1 tsp cinnamon
1/4 tsp salt
1/4 tsp ground nutmeg
1/8 tsp ground cloves
5 cups bread (cubed and dried)
Directions:
1. 1. In a large bowl, combine first 8 ingredients. Mix with bread cubes and toss. Pour into an 8-inch baking dish coated with cooking spray. Bake at 350 degrees for until knife inserted near the center comes out clean (about 40 minutes to 1 hour). Yields 6 servings.
