No oil but really moist and tasty. A great basic high-fibre bran muffin, not too sweet, not too dense. Ingredients:
1 cup all-purpose flour |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1/2 teaspoon cinnamon |
1/3 cup brown sugar, packed |
1 cup wheat bran |
1 cup all-bran cereal (not flakes) |
1 egg |
1 tablespoon molasses |
1/2 teaspoon vanilla |
1 1/4 cups 2% low-fat milk |
1/4 cup water |
1/4 cup plain yogurt |
Directions:
1. Heat oven to 400 degrees. 2. Mix first six ingredients in a medium bowl. 3. Mix the rest of the ingredients together in a larger bowl. 4. Add dry ingredients to wet ingredients. Stir but do not overbeat. 5. Spoon into non-stick muffin tins (or spray with vegetable oil spray). 6. Bake for 16-18 minutes or until a knife comes out clean. |
