Adapted from the recipe on the back of a can of Bush's brand black beans. They're a great low-fat side dish for any Mexican fare. Very simple to prepare. Ingredients:
2 (15 ounce) cans black beans, drained and rinsed |
1/2 cup onion, chopped |
1 cup fat-free chicken broth |
1 teaspoon ground thyme |
1 teaspoon ground cumin |
1/2 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. Combine all ingredients into a medium saucepan. 2. Cover and simmer for 10 minutes or until beans are tender and begin to split. 3. Serve immediately. |
