Found this easy to prepare recipe in my grocery store's (Stop & Shop) circular. It makes a delicious, hearty soup that is low in fat and high in nutrition. My husband loves it and has requested it often. I love it because it's easy to prepare and low fat! Ingredients:
1 tablespoon vegetable oil |
1 lb lean stewing beef, diced into small pieces |
1 tablespoon flour |
32 ounces fat-free beef stock (usually boxed) |
1 carrot, diced |
1 medium onion, diced |
1 stalk celery, diced |
3/4 cup pearl barley |
1/2 teaspoon thyme |
1 (14 1/2 ounce) can diced tomatoes |
Directions:
1. Add oil into skillet. 2. Sear diced meat in pan. 3. Add flour to pan and stir for 1 minute. 4. Add beef stock to pan and stir. 5. Add remainder of ingredients. 6. Simmer 1-2 hours until barley is softened. |
