Low-Fat Banana Spice Bread |

This is very moist and keeps well, adapted from butter busters cookbook. Whole wheat pastry flour can be used in place of white flour. Ingredients:
1 3/4 cups all-purpose flour |
2 teaspoons baking powder |
1/2 teaspoon ground cinnamon |
1/4 teaspoon ground cloves |
1/4 teaspoon salt |
1/4 cup oat bran |
2 egg beaters egg substitute |
1 cup packed brown sugar |
1/3 cup applesauce |
3 medium sized ripe bananas, mashed (1 1/2 cup) |
Directions:
1. Preheat oven to 350°F Spray a 9X5 inch loaf pan with cooking spray. Sift flour, baking powder, cinnamon, cloves and salt into a medium size bowl. Stir in oat bran; set aside. In another medium size bowl, beat together Egg Beaters, brown sugar, and applesauce; add bananas. Add dry ingredients to banana mixture. Beat until just combined. Pour into prepared load pan. Bake in oven for 50 minutes. Remove from pan. Cool on wire rack. |
