I have made a wonderful Hawaiian Banana Nut Bread for years and it's always moist and delicious, but it's full of fat. We found that my husband really needed to change his diet to lower his fat intake, but he loves good food. So I have set out to try and change some of his favorite recipes to fit his new diet requirements. This is one of the first and it was a success. Ingredients:
3 cups whole wheat flour |
1 teaspoon salt |
1 teaspoon baking soda |
1 teaspoon cinnamon |
1 1/2 cups splenda granular |
3/4 cup egg substitute |
2 tablespoons canola oil |
1/2 cup applesauce |
2 cups mashed bananas |
20 ounces crushed pineapple in juice |
2 teaspoons vanilla extract |
1/2 cup nuts |
Directions:
1. 1. Combine flour, salt, soda and cinnamon; set aside. 2. 2. Combine remaining ingredients (except nuts) and add to dry ingredients. 3. 3. Fold nuts into batter and spoon into 2 loaf pans that have been prepped with cooking spray. 4. 4. Cook for 65 minute in preheather 350 degree oven. 5. 5. Let cool for 10 minutes prior to removing from pans. |
