From the In the Kitchen the Costco Way Cookbook. Ingredients:
nonfat cooking spray |
3/4 cup unsweetened applesauce |
1 cup sugar |
4 egg whites |
1 3/4 cups flour |
1 teaspoon salt |
3/4 teaspoon baking soda |
1 teaspoon baking powder |
1 teaspoon ground cinnamon |
1 cup carrot, grated |
1 cup mashed banana (about 3) |
Directions:
1. Preheat oven to 350°F, coat 9- by- 5 inch loaf pan with cooking spray. 2. In a bowl combine applesauce, sugar and eggs, beat until light and fluffy. 3. In separate bowl, combine flour, salt, baking soda, baking powder & cinnamon. Add to the batter and blend well. 4. Fold carrots and banana into the batter. 5. Pour batter into the prepared pan. 6. Bake for 60-65 minutes or until toothpick inserted into the center comes out clean. |
