Low-Fat Bacon Mustard Dressing |

Can be prepared in 45 minutes or less. Ingredients:
1 teaspoon finely chopped uncooked bacon (about 1/4 slice) |
6 tablespoons fresh orange juice |
1/2 cup nonfat sour cream |
1 1/2 tablespoons fresh lemon juice |
1 tablespoon dijon mustard |
3 tablespoons chopped white part of scallions (about 3) |
1 large garlic clove, minced |
1 teaspoon firmly packed brown sugar |
Directions:
1. In a small heavy skillet cook bacon over moderate heat, stirring, until crisp and remove skillet from heat. Add orange juice to skillet and scrape up brown bits. In a blender blend bacon mixture, remaining ingredients, and salt and pepper to taste until smooth. Dressing keeps, covered and chilled, 1 week.
