Low-Fat Apple Ginger Spice Whole Wheat Waffles

These are delicious and healthy! Great for Breakfast or dessert. I like to make a huge batch and freeze the left overs as toaster waffles for a later date. I'm done with Eggos.
Ingredients:
3/4 cup applesauce
2 cups unbleached all-purpose flour
2 cups whole wheat flour
3 teaspoons baking powder
4 tablespoons brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
4 eggs
3 cups low-fat milk
1/2 cup apple juice
2 tablespoons fresh ginger, grated
Directions:
1. Combine flours, baking powder, sugar, cinnamon, clove and nutmeg in a large mixing bowl.
2. In another bowl, whisk eggs and add milk, apple juice, ginger and apple sauce.
3. Add wet ingredients to dry and blend.
4. Cook in a preheated waffle iron, until golden.
5. Serve with honey, syrup, sliced apples or your favorite topping.
